  • 2 tablespoons olive oil (plus more for roasting)
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 4 cups vegetable broth
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss cauliflower florets with olive oil, salt, and pepper on a baking sheet. Roast until golden and tender (about 25 minutes).
