  • 1 diced tomato
  • 1/3 cup diced red onion
  • 1 cup chopped spinach
  • 1/2 cup feta cheese
  • 1 cup shredded mozzarella cheese
  • 3 burrito-style tortillas

Instructions

  1. In a bowl, mix together the diced tomato, red onion, chopped spinach, feta cheese, and mozzarella cheese until well combined.
  2. Take one tortilla and place about one-third of the filling on one side. Fold it in half to cover the filling.
  3. Heat a small amount of oil in a large flat pan or griddle over medium heat. Cook each folded tortilla for about 3-4 minutes on each side until golden brown and cheese is melted.
