  • 12 ounces dry pasta (farfalle)
  • 1 English cucumber (diced)
  • 1 pint cherry tomatoes (halved)
  • 2/3 cup kalamata olives (sliced)
  • 4 ounces feta cheese (crumbled)
  • 1 medium red onion (thinly sliced)
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon freshly-squeezed lemon juice
  • 2 teaspoons dried oregano, minced
  • 1 teaspoon honey (or your desired sweetener)
  • 2 small garlic cloves (minced)
  • 1/4 teaspoon freshly-cracked black pepper
  • 1/4 teaspoon salt
  • pinch of crushed red pepper flakes

Instructions

  1. Cook pasta in boiling water according to package instructions until al dente. Drain and cool slightly.
  2. Dice cucumber, halve cherry tomatoes, and thinly slice red onion. Combine vegetables in a large mixing bowl.
  3. In a separate bowl, whisk together olive oil, red wine vinegar, lemon juice, oregano, honey, garlic, black pepper, salt, and crushed red pepper flakes.
  4. Add cooled pasta to the vegetable mixture. Pour vinaigrette over the salad and toss gently to coat evenly. Top with crumbled feta before serving.
