Ingredients

Scale
  • 1 tbsp olive oil
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 6 cups chicken broth
  • ½ cup uncooked rice (or orzo pasta)
  • 2 cups cooked shredded chicken
  • Juice of 2 lemons
  • 2 large eggs
  • Salt and pepper to taste
  • Fresh dill (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté diced onion for about 5 minutes until softened, then add minced garlic and cook for another 1-2 minutes.
  2. Pour in the chicken broth and bring to a boil. Add uncooked rice (or orzo) and reduce heat to simmer for 10-12 minutes until tender.
  3. In a separate bowl, whisk together eggs and lemon juice until frothy.
  4. Gradually ladle hot broth into the egg mixture while whisking continuously to temper it. Slowly pour back into the pot while stirring gently.
  5. Stir in shredded chicken and season with salt and pepper. Heat through without boiling.
  6. Serve hot, garnished with fresh dill and lemon wedges.
