  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 cloves, minced garlic
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 large whole wheat or spinach tortillas
  • 1 cup hummus
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, thinly sliced
  • 1/4 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup kalamata olives, pitted and sliced (optional)
  • Fresh spinach or mixed greens

Instructions

  1. Marinate chicken by combining olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl. Add chicken breasts and refrigerate for at least 30 minutes.
  2. Preheat grill over medium-high heat. Grill chicken for about 6-7 minutes per side until cooked through (internal temperature of 165°F). Let rest before slicing.
  3. Spread hummus on each tortilla, then add sliced chicken and top with cherry tomatoes, cucumber, onion, feta (if using), olives (if desired), and fresh greens.
  4. Roll each wrap tightly and secure with a toothpick if needed.
