  • 2 tbsp lemon juice (plus zest)
  • 2 garlic cloves, minced
  • 2 tsp oregano
  • 1/2 tsp paprika
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 8 whole wheat pitas
  • 1 cup Persian cucumbers, chopped
  • 1 cup cherry tomatoes, chopped
  • 1 cup red bell pepper, chopped
  • 1/4 cup red onion, diced
  • 2 tbsp parsley, chopped
  • 1/2 cup feta cheese, crumbled
  • 1 lemon, juice
  • Salt and pepper (to taste)
  • 1/2 cup tzatziki

Instructions

  1. 1. Marinate the chicken: Combine olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper in a bowl. Add chicken pieces and marinate for at least 15 minutes.
  2. 2. Prepare the salsa: In another bowl, mix chopped cucumbers, cherry tomatoes, red bell pepper, red onion, parsley (or herb of choice), feta cheese, lemon juice, salt, and pepper.
