  • 1 lb. ground chicken
  • 3 tablespoons olive oil
  • 1 medium onion, diced
  • 1 tablespoon garlic, minced
  • 1 cup baby spinach, chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Sauté the diced onion until translucent, about 5 minutes, then add minced garlic and cook briefly until fragrant.
  2. In a large bowl, combine the sautéed onion and garlic with chopped spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix well.
  3. Shape the mixture into eight patties approximately ½ inch thick.
  4. In the skillet, heat the remaining olive oil over medium heat and cook the patties for 5-6 minutes on each side until golden brown and cooked through (internal temperature reaches 165°F).
  5. Drain on paper towels and serve warm with your choice of garnishes.
