  • 1.5 lbs white fish fillets (cod, halibut, or tilapia)
  • 2 tablespoons olive oil
  • 1 medium red onion, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, halved
  • Juice and zest of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
  2. In a large bowl, combine onions, bell peppers, cherry tomatoes, garlic, olives, olive oil, oregano, salt, and pepper. Toss well.
  3. Spread the vegetable mixture evenly in the baking dish. Place fish fillets on top and drizzle with lemon juice and zest; season with salt and pepper.
