  • 1.5 lbs white fish fillets (cod, halibut, or tilapia)
  • Juice and zest of 1 lemon
  • 2 tablespoons olive oil
  • 1 medium red onion, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, halved
  • Seasonings: salt, pepper, dried oregano, paprika

Instructions

  1. Preheat oven to 400°F (200°C) and grease a baking dish with olive oil.
  2. In a large bowl, combine sliced onions, bell peppers, cherry tomatoes, garlic, olives, and capers (if using). Drizzle with olive oil and season with oregano, paprika, salt, and pepper. Toss well.
  3. Spread the vegetable mixture in the baking dish. Place the fish on top skin-side down. Squeeze lemon juice over the fish and sprinkle with zest and additional seasoning if desired.
  4. Bake uncovered for 20-25 minutes until fish is opaque and flakes easily.
  5. Garnish with chopped parsley and serve with lemon wedges.
