  • 1 small onion (finely diced)
  • 1 cup bread crumbs
  • 1 cup milk
  • 2 eggs (beaten)
  • 1 cup cheddar cheese (shredded)
  • 1 teaspoon dried parsley
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon ground paprika
  • 1/4 teaspoon red pepper flakes
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon Kosher salt
  • 1 tablespoon garlic (minced)
  • 1/3 cup ketchup
  • 1 tablespoon tomato paste
  • 3 tablespoons brown sugar
  • 1 teaspoon apple cider vinegar
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon mustard

Instructions

  1. Preheat your oven to 400°F.
  2. Line a rimmed baking sheet with aluminum foil and lightly spray with oil.
  3. In a large bowl, combine ground beef, diced onion, bread crumbs, milk, beaten eggs, cheddar cheese, and seasonings. Mix gently until just combined.
  4. Shape the mixture into a loaf on the prepared baking sheet.
  5. In a separate bowl, whisk together glaze ingredients and spread half over the meatloaf.
  6. Bake for about 60 minutes, brushing on more glaze halfway through cooking until the internal temperature reaches 160°F.
  7. Allow to rest for 10 minutes before slicing.
