  • 1 tbsp lemon zest (optional)
  • 3 tbsp lemon zest
  • 1/4 cup lemon juice
  • 1/3 cup granulated sugar
  • 3 tbsp unsalted butter, room temperature
  • 2 large eggs
  • 1/8 tsp salt
  • 1 cup mixed berries
  • Powdered sugar

Instructions

  1. Preheat your oven according to the puff pastry package instructions. Roll out the puff pastry on a floured surface if necessary.
  2. Whisk 1 egg with 2 tbsp milk for an egg wash. Brush over the pastry before sprinkling with coarse sugar.
  3. Bake the pastry on a lined baking sheet until golden brown (20-25 minutes). Let cool.
  4. Beat cold whipping cream with powdered sugar and vanilla until soft peaks form. Fold in mascarpone cheese until smooth.
  5. For lemon curd, combine lemon juice, zest, sugar, butter, eggs, and salt in a saucepan over medium heat until thickened (10-15 minutes).
  6. Slice cooled pastries horizontally, fill with mascarpone mixture, top with lemon curd, and close.
  7. Garnish with fresh berries and dust with powdered sugar before serving.
