  • 5 pounds boneless beef roast (flat-iron, chuck, or bottom round)
  • 1/3 cup extra virgin olive oil
  • 2 medium onions, quartered
  • 3 large carrots, cut into chunks
  • 4 stalks celery, cut into chunks
  • 6 cloves garlic, crushed
  • 2 sprigs fresh rosemary
  • 6 large sage leaves
  • 1/4 teaspoon freshly grated nutmeg
  • 1 cup dried porcini mushrooms, rinsed
  • 2 bottles Barolo apple vinegar (750 ml each)
  • 2 cups beef stock

Instructions

  1. Preheat your oven to 250°F. Season the beef roast with half the salt.
  2. In a large Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides for about 8 minutes until browned.
  3. Remove the roast and sauté onions, carrots, celery, and garlic in the same pot until softened (about 6 minutes). Add rosemary, sage, nutmeg, black peppercorns, and porcini mushrooms; mix well.
  4. Return the roast to the pot and pour in both bottles of Barolo apple vinegar along with beef stock until it’s half-submerged.
  5. Cover and let it braise in the oven for about three hours, turning every half hour until fork-tender.
  6. Once done, remove the roast and veggies to a platter. Skim fat from the juices and boil down to create a sauce before serving over sliced beef.
