  • 4 cups cooked day-old jasmine rice
  • 6 oz ground chicken
  • 3 tbsp fish sauce
  • 1 shallot, sliced
  • 2 tbsp chopped lemongrass
  • 2 to 4 Thai chilies, chopped
  • 4 cloves garlic, chopped
  • Optional: 2 eggs

Instructions

  1. In a small bowl, mix fish sauce, sugar, and black pepper. Set aside.
  2. Heat a wok over high heat with cooking oil. Add shallot, lemongrass, chili, and garlic; stir-fry until fragrant (about 1 minute).
  3. Add ground chicken and cook until golden brown (1-2 minutes), breaking it apart with a wooden spoon.
  4. If using eggs, push the chicken to one side of the wok and scramble them in the cleared space until set.
  5. Add cold rice and pour the sauce mixture around the edge of the wok. Stir well to combine.
  6. Turn off heat and stir in chopped cilantro before serving.
