  • 2/3 cup granulated sugar
  • 1 Tablespoon lemon zest
  • 1 cup fresh squeezed lemon juice
  • 6 Tablespoons unsalted butter
  • Ladyfingers (7 oz package)
  • 8 oz mascarpone cheese
  • 1 ½ cups heavy whipping cream

Instructions

  1. Prepare the lemons by zesting and juicing them.
  2. Make the lemon curd by whisking egg yolks, sugar, lemon zest, juice, and salt over simmering water until thickened; stir in butter.
  3. Cool the lemon curd in the refrigerator.
  4. For the lemon syrup, combine remaining lemon juice, water, and sugar in a saucepan; boil and cool.
  5. Whip mascarpone with lemon zest; fold in whipped cream until just combined.
  6. Assemble by dipping ladyfingers in syrup and layering with mascarpone mixture and cooled lemon curd.
  7. Chill for at least two hours before serving.
