  • 2 cups diced carrots
  • 1 cup finely chopped onion
  • ½ cup finely chopped celery
  • 1 tablespoon minced garlic
  • 1 ½ pounds boneless, skinless chicken breasts
  • 6 cups low sodium chicken broth
  • 1 cup dry orzo pasta
  • ½ cup fresh squeezed lemon juice

Instructions

  1. Heat olive oil in your chosen pot over medium heat. Add carrots, onion, celery, and garlic; sauté until softened (about 5–7 minutes).
  2. Stir in chicken breast and seasonings (black pepper, parsley, thyme, salt, bay leaves).
  3. Pour in chicken broth and bring to a simmer.
  4. Cook in Instant Pot on high pressure for 15 minutes or simmer on stovetop for about 30–35 minutes until the chicken is cooked through.
  5. Remove chicken to shred it, then return it to the pot along with orzo pasta.
  6. Cook until pasta is tender (around 10 minutes), then stir in lemon juice before serving.
