  • 350g water
  • 500g bread flour
  • 11g salt
  • 150g fresh blueberries
  • Zest of 1 lemon
  • 113g room temperature butter (8 tablespoons)
  • 75g mashed fresh blueberries (1/2 cup)
  • 45g honey (2 tablespoons)
  • Pinch of salt

Instructions

  1. In a mixing bowl, combine the active sourdough starter and water.
  2. Gradually incorporate bread flour and salt, stirring until combined. Allow the dough to rest for 30 minutes.
  3. Gently mix in lemon zest and mashed blueberries along with honey.
  4. Cover the bowl with a cloth and let the dough rise at room temperature for about 8 hours or until it has increased in size by at least 50%.
  5. Turn the risen dough onto a floured surface, shape it into a round loaf using a bench scraper, and place it on a parchment-lined baking sheet.
  6. Let it rise for another hour before preheating your oven to 450°F (232°C).
  7. Bake for approximately 45 minutes or until golden brown.
