  • 1 lb ground turkey or chicken
  • 4 cups vegetable stock
  • 2½ cups marinara sauce
  • ½ cup full-fat ricotta cheese
  • ½ cup heavy cream
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • ½ cup shredded Parmesan cheese, for garnish
  • Sea salt and ground black pepper, to taste
  • 2 tbsp butter
  • ¼ cup chopped fresh basil, for garnish

Instructions

  1. In a large Dutch oven or stockpot, melt butter over medium-low heat. Sauté diced onion and minced garlic with salt and pepper until fragrant.
  2. Increase heat to medium and add the ground turkey or chicken; cook until browned, breaking it apart as it cooks. Drain excess grease.
  3. Pour in vegetable stock and marinara sauce, bringing the mixture to a boil.
  4. Lower heat and stir in heavy cream and ricotta cheese; let simmer for 30–45 minutes, stirring occasionally.
