  • ¾ cup unsalted butter, melted
  • ¾ cup packed brown sugar
  • ½ cup granulated sugar
  • ½ cup pure pumpkin puree
  • ¼ cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 large egg yolk

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In one bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, whisk the melted butter with both sugars until smooth. Add the pumpkin puree, maple syrup, vanilla extract, and egg yolk until well combined.
  4. Gradually mix the dry ingredients into the wet mixture until just combined. Chill the dough for about 30 minutes.
  5. Scoop out about 1½ tablespoons of dough per cookie onto prepared baking sheets, spacing them apart.
  6. Bake for 10–12 minutes until lightly golden but still soft in the center. Cool on the sheet for five minutes before transferring to a wire rack.
