  • 1 1/2 cups unsalted butter (for buttercream)
  • 3 cups powdered sugar
  • 2 tbsp strong brewed coffee (cooled, for buttercream)
  • 1 tsp vanilla extract (for buttercream)

Instructions

  1. Preheat your oven to 350°F (175°C). Cream together softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in cooled coffee and vanilla.
  2. In a separate bowl, whisk together flour, baking powder, and salt. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  3. Divide the batter between prepared cake pans and bake for 25-30 minutes until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to racks.
  4. For the buttercream, beat softened butter with powdered sugar until smooth; gradually add cooled coffee and vanilla until creamy.
