  • 3 tbsp Kashmiri red chili powder
  • 1.5 tsp coriander powder
  • 1.5 tsp garam masala
  • 0.5 tsp turmeric powder
  • 0.5 tsp black pepper
  • Salt to taste
  • 0.25 cup mustard oil
  • 0.25 cup thick yogurt
  • 2 tsp ginger garlic paste
  • 1 tbsp lemon juice
  • 2 tbsp butter

Instructions

  1. Make 2-3 slits on each chicken piece using a sharp knife to allow the marinade to penetrate.
  2. Heat mustard oil in a bowl until medium hot but not smoking.
  3. Mix dry spices into the hot oil and let sit for 5 minutes to infuse flavors.
  4. Combine yogurt, ginger-garlic paste, and lemon juice in the same bowl; whisk until smooth.
  5. Add chicken pieces to the marinade; rub thoroughly and cover tightly. Marinate for at least 4 hours or overnight.
  6. Remove from refrigerator about an hour before cooking to reach room temperature.
