  • 100 grams egg whites (room temperature)
  • 1/4 teaspoon cream of tartar
  • 60 grams granulated sugar
  • 110 grams almond flour (sifted)
  • 190 grams powdered sugar (sifted)
  • 10 grams unsweetened cocoa powder (sifted)
  • Mini dehydrated vegan marshmallows for topping

Instructions

  1. Prepare the Ganache: Combine chopped dark chocolate in a bowl. Heat heavy cream in a saucepan until it simmers and pour over chocolate. Let sit for 2 minutes; stir until smooth.
  2. Make the Macaron Batter: Whisk egg whites and cream of tartar until soft peaks form. Gradually add granulated sugar; whisk until stiff peaks form. Sift almond flour, powdered sugar, and cocoa powder together before gently folding into meringue.
  3. Pipe Shells: Fill a piping bag with batter and pipe small circles onto lined baking sheets. Allow to rest for 30 minutes until they form a skin.
  4. Bake: Preheat oven to 300°F (150°C) and bake macarons for about 15 minutes, rotating halfway through.
