  • 2 tablespoons honey
  • 2 tablespoons rose harissa paste
  • 150g feta cheese
  • 300g Greek yogurt
  • 240g cooked chickpeas
  • Olive oil
  • Cinnamon
  • Salt
  • Black pepper

Instructions

  1. Preheat your oven to 190°C (375°F).
  2. Trim carrot tops, then toss carrots in olive oil, cinnamon, salt, and pepper on a roasting tray. Roast for 30 minutes until tender.
  3. In a pestle and mortar, combine chopped carrot tops with lemon juice and olive oil to create a green sauce.
  4. Mix Greek yogurt and crumbled feta in a bowl until smooth; season with salt and pepper.
  5. Add drained chickpeas to the roasting tray with the carrots; roast for an additional 15 minutes until crisp.
  6. Combine honey and harissa paste in a bowl; coat roasted vegetables before serving over whipped feta.
