  • 1 fully cooked bone-in spiral chicken (8 lbs)
  • 1 orange, sliced
  • 1 cup orange juice
  • 1 cup dark brown sugar
  • 1 cup honey
  • 1/2 cup orange marmalade
  • 1/4 cup Dijon mustard
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp Bayou City Lemon Pepper
  • 1/2 tsp cloves
  • 1 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Layer sliced oranges in a shallow roasting pan and pour in orange juice.
  3. Place a roasting rack over the oranges and add the fully cooked chicken.
  4. In a saucepan, combine brown sugar, honey, orange marmalade, and salt; heat to meld flavors.
  5. Simmer glaze for about four minutes until slightly thickened.
  6. Pour half the glaze over the chicken and bake uncovered for 50 minutes.
  7. After that time, pour remaining glaze over the chicken and bake for another 20 minutes until internal temperature reaches 140°F (60°C).
  8. Let rest for 15–20 minutes before carving and serve with leftover glaze.
