  • 1 and 1/2 cups warm water

  • 1/4 cup olive oil
  • 2 tsp salt
  • 6 cups water (for boiling)
  • 2 tbsp baking soda
  • 1 egg (for egg wash)
  • Coarse salt (for topping)
  • Everything but the bagel seasoning (optional)

Instructions

  1. Activate the yeast: Combine warm water, yeast, and brown sugar in a bowl. Let sit for 5-10 minutes until foamy.
  2. Make the dough: Add flour, olive oil, and salt to the yeast mixture. Mix until a dough forms.
  3. Let it rise: Drizzle dough with olive oil, cover with a damp cloth, and let rise for about an hour until doubled in size.
  4. Shape pretzels: Punch down the dough, divide into 12 pieces, roll into ropes, and twist into pretzel shapes.
  5. Prepare for baking: Preheat oven to 450°F (232°C) and boil six cups of water with baking soda.
  6. Boil each pretzel: Dip each shaped pretzel in boiling water for 15-30 seconds.
  7. Add toppings: Brush with egg wash and sprinkle with coarse salt.
  8. Bake: Place on parchment-lined sheets and bake for about 10-11 minutes until golden brown.
  9. Cool down before serving.
