  • 11 1/2 lbs boneless, skinless chicken breasts
  • 1 medium to large yellow onion
  • 3 large carrots
  • 2 stalks celery
  • 34 cloves garlic
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 bay leaf (optional)
  • 2 tsp better than bouillon base, chicken flavor
  • 89 cups reduced sodium chicken broth
  • 8 oz egg noodles
  • Fresh parsley, minced (for garnish)

Instructions

  1. Place trimmed chicken breasts at the bottom of a slow cooker. Add diced onion, sliced carrots, celery, minced garlic, thyme, rosemary, salt, pepper, and bay leaf.
  2. Top with the better than bouillon base and pour in the chicken broth. Stir gently to combine.
  3. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until the chicken is tender.
  4. Remove chicken to shred it using two forks; return it to the pot.
  5. Stir in egg noodles and cover again for another 10-15 minutes on LOW until noodles are tender.
  6. Serve garnished with minced parsley.
