  • 5 tbsp olive oil
  • 2 small eggplants
  • 2 zucchini
  • 6 tomatoes
  • 1 red onion
  • 1 yellow bell pepper
  • 700 grams crushed tomatoes
  • Fresh herbs (basil, parsley, thyme)
  • Garlic, salt, and pepper

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Slice all vegetables evenly and set aside.
  3. In a mixing bowl, combine chopped herbs with olive oil, minced garlic, salt, and pepper.
  4. In a cast iron skillet, heat olive oil over medium heat; sauté diced onion and bell pepper until soft.
  5. Stir in minced garlic and seasonings; add crushed tomatoes and simmer for 10 minutes.
  6. Layer sliced vegetables over the tomato sauce; drizzle with herb dressing.
  7. Cover with foil and bake for 40 minutes; uncover and bake for another 20 minutes until softened.
