Ingredients

  • 2 TBSP butter
  • 1 lb bone-in chicken thighs
  • 3 celery stalks (diced)
  • 2 medium carrots (peeled and sliced)
  • 1/2 yellow onion (diced)
  • 8 cups chicken stock
  • 12 ounces frozen egg noodles
  • 1/2 TBSP dried thyme
  • 1/2 TBSP dried basil
  • 2 bay leaves
  • 1/2 to 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Sauté the chicken thighs in melted butter over medium heat until browned. Remove from pot.
  2. In the same pot, sauté diced celery, carrots, onion, and garlic until softened.
  3. Add seasonings and chicken stock; bring to a boil. Return chicken to the pot and simmer for 25-30 minutes.
  4. Remove chicken, shred it into pieces, then return it to the soup.
  5. Bring to a boil again and add frozen egg noodles; cook according to package instructions.
  6. Serve hot and enjoy!
