- 2 TBSP butter
- 1 lb bone-in chicken thighs
- 3 celery stalks (diced)
- 2 medium carrots (peeled and sliced)
- 1/2 yellow onion (diced)
- 8 cups chicken stock
- 12 ounces frozen egg noodles
- 1/2 TBSP dried thyme
- 1/2 TBSP dried basil
- 2 bay leaves
- 1/2 to 1 tsp salt
- 1/2 tsp black pepper
- Sauté the chicken thighs in melted butter over medium heat until browned. Remove from pot.
- In the same pot, sauté diced celery, carrots, onion, and garlic until softened.
- Add seasonings and chicken stock; bring to a boil. Return chicken to the pot and simmer for 25-30 minutes.
- Remove chicken, shred it into pieces, then return it to the soup.
- Bring to a boil again and add frozen egg noodles; cook according to package instructions.
- Serve hot and enjoy!
