  • 1 cup onion (diced)
  • 1 cup carrots (peeled & diced)
  • 1 cup celery (finely diced)
  • 1 teaspoon minced garlic
  • 2 quarts chicken broth
  • 2 pounds boneless skinless chicken breasts
  • 4 cups egg noodles
  • Fresh herbs (thyme, parsley)

Instructions

  1. In a large stockpot, heat olive oil over medium-high heat. Sauté onion, carrots, celery, and garlic until onions are translucent (5-7 minutes).
  2. Add chicken broth and whisk in chicken base. Stir well.
  3. Incorporate chicken breasts, thyme sprigs, bay leaves, salt, and pepper. Mix thoroughly.
  4. Bring to a boil; then reduce heat and simmer for 45 minutes or until chicken is fork-tender.
  5. Remove bay leaves and thyme; shred the chicken and return it to the pot.
  6. Bring back to boil; add egg noodles and cook for an additional 10 minutes or until tender.
  7. Serve warm in bowls.
