  • 1/2 cup raw almonds
  • 1/2 cup unsweetened shredded coconut
  • 5 Medjool Dates, pitted
  • 1/8 tsp salt
  • 3 Tbsp sunflower seed butter
  • 3 Tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 cup dark chocolate chips
  • 1 Tbsp sunflower seed butter

Instructions

  1. In a food processor, blend raw almonds, shredded coconut, dates, salt, sunflower seed butter, maple syrup, and vanilla until clumpy.
  2. Scoop one tablespoon of dough into a mini silicone muffin pan and shape into cups with your fingers.
  3. Whisk together caramel ingredients in a bowl until smooth.
  4. Fill each cup with 1 teaspoon of caramel.
  5. Melt dark chocolate chips in a microwave-safe bowl; mix in sunflower seed butter and pour over cups.
  6. Refrigerate for at least 30 minutes to set before serving.
