  • 1 red bell pepper
  • 1 red onion
  • 1 jalapeno
  • 16 oz frozen corn
  • 4 cups cooked chicken breast
  • 1/2 cup light mayo
  • 1/2 cup plain nonfat Greek yogurt
  • 1 lime (zested and juiced)
  • 1/2 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp kosher salt
  • 2 tsp chili powder
  • 1 bunch scallions
  • 1/2 cup fresh cilantro

Instructions

  1. Preheat your oven to 400°F. Chop the red bell pepper, red onion, and jalapeno. Combine them with frozen corn on a sheet pan, spray lightly with olive oil, and sprinkle with salt. Roast for 20-25 minutes until tender.
  2. In a mixing bowl, whisk together light mayo, Greek yogurt, lime zest and juice, cumin, paprika, kosher salt, and chili powder until creamy.
  3. Once the veggies have cooled slightly, combine them in the bowl with chopped chicken, scallions, and cilantro. Mix gently until everything is well-coated.
  4. Sprinkle Cotija cheese on top before serving.
