  • 2 tbsp avocado oil
  • 1.5 lb raw chicken breasts, diced
  • 1 small red onion, diced
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 1 small head broccoli, chopped into florets
  • 20 oz can pineapple chunks
  • Sesame seeds (for garnish)
  • 1/4 cup pineapple juice
  • 1/4 cup rice wine vinegar
  • 1/3 cup soy sauce (or tamari for gluten-free)
  • 1.5 tsp sesame oil
  • 2 tbsp arrowroot powder (or cornstarch)

Instructions

  1. Heat 1 tbsp avocado oil in a large pan over medium heat. Add diced chicken and cook for about 7-8 minutes until fully cooked through.
  2. Remove the chicken and drain excess liquid from the pan.
  3. Add another tablespoon of avocado oil; sauté onion, red pepper, yellow pepper, and broccoli for another 7-8 minutes until softened.
  4. While vegetables are cooking, whisk together the sauce ingredients in a bowl until smooth.
  5. Return cooked chicken to the pan along with the sauce and pineapple chunks; stir well.
  6. Let simmer on medium heat for about 5-6 minutes until the sauce thickens.
  7. Serve over rice or in lettuce wraps; sprinkle with sesame seeds.
