  • 1 cup diced carrots
  • 1 cup diced celery
  • ½ lb ground turkey (or substitute with ground chicken, beef, or crumbled tofu)
  • 3 cloves minced garlic
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp tomato paste
  • 6 cups chicken broth (or vegetable broth)
  • 1 cup crushed tomatoes
  • 2 cups diced potatoes (or sweet potatoes or butternut squash)
  • 1 cup frozen green peas
  • 1 tbsp fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onions, carrots, and celery until onions are translucent (about 5 minutes).
  2. Add ground turkey and brown it thoroughly while breaking it apart.
  3. Stir in minced garlic and Italian seasoning; cook for another minute.
  4. Mix in tomato paste, followed by chicken or vegetable broth and crushed tomatoes. Bring to a simmer.
  5. Add diced potatoes and frozen peas; simmer until potatoes are tender (about 15 minutes).
  6. Season with salt and pepper to taste; garnish with fresh parsley before serving.
