  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 8 medium tortillas (flour or corn)
  • 1 can (10 ounces) enchilada sauce
  • 1 ½ cups shredded cheese (cheddar or Mexican blend)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté chopped onion until translucent, then add minced garlic.
  3. Add ground turkey and cook until browned. Stir in black beans, diced tomatoes, green chilies, and spices.
  4. Spread enchilada sauce in a baking dish. Fill each tortilla with the turkey mixture, roll tightly, and place seam-side down in the dish.
