  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 bell peppers (red, yellow, green), sliced
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp chili powder (optional)
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ¼ cup low-sodium chicken broth
  • 1 tbsp tomato paste
  • 1 tbsp soy sauce or coconut aminos
  • Juice of ½ lime (optional)
  • Fresh cilantro or parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté the diced onions for about 3 minutes until soft. Add minced garlic and cook for another 30 seconds.
  2. Add the ground turkey to the skillet and break it up as it cooks for about 5-6 minutes until no longer pink.
  3. Stir in smoked paprika, cumin, chili powder (if using), salt, and black pepper.
  4. Incorporate sliced bell peppers and cook for another 3-4 minutes until they start to soften.
  5. Pour in chicken broth, tomato paste, and soy sauce; let simmer for about 2-3 minutes.
  6. Finish by squeezing fresh lime juice before serving and garnishing with cilantro or parsley.
