  • 1 head cauliflower, cut into florets
  • 3 large carrots, cut into round pieces
  • 2 Tbsp extra virgin olive oil
  • ½ tsp garlic powder
  • 1 tsp oregano
  • 1 tsp paprika
  • 1 tsp ground cumin
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • ½ large lemon, juiced
  • ¼ cup fresh parsley, chopped (optional)
  • 1 can chickpeas, also known as garbanzo beans (15.5 oz-16 oz)
  • 1 sweet potato, diced
  • 2 Tbsp extra virgin olive oil
  • ½ tsp ground cumin
  • ½ tsp paprika
  • ¼ tsp garlic powder
  • ½ tsp salt
  • ⅕ tsp ground black pepper
  • 1 cup greek yogurt, or plant-based yogurt
  • ¼ cup tahini
  • 1 large lemon, juiced
  • 2 Tbsp extra virgin olive oil
  • 1 clove garlic
  • ½ tsp ground cumin
  • ½ tsp salt

Instructions

  1. Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper.
  2. For the roasted veggies: Toss cauliflower and carrots with olive oil and spices on one baking sheet. Roast for 25-30 minutes until tender. Add lemon juice and parsley; roast for another 5-10 minutes until golden.
  3. For chickpeas and sweet potatoes: Drain and dry chickpeas. Toss with olive oil and spices on the second baking sheet along with diced sweet potatoes. Roast for 20-28 minutes until crispy.
  4. For the tahini yogurt sauce: Blend yogurt, tahini, lemon juice, garlic, cumin, and salt in a food processor until smooth.
  5. Assemble your bowl: Layer tahini sauce at the bottom, followed by roasted veggies and chickpeas.
