  • 4 boneless skinless chicken breasts or thighs
  • 1.5 pounds baby Yukon Gold or red potatoes (halved)
  • 4 cloves garlic (minced)
  • â…“ cup grated Parmesan cheese
  • Olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, season chicken with Italian seasoning, smoked paprika, salt, black pepper, and olive oil.
  3. In another bowl, coat halved potatoes with olive oil, minced garlic, salt, pepper, and half of the Parmesan cheese.
  4. In a cast iron skillet or oven-safe dish, place seasoned chicken in the center and surround with the potatoes.
  5. Bake for about 30 minutes until chicken reaches an internal temperature of 165°F (74°C) and potatoes are tender.
  6. Sprinkle remaining Parmesan over the dish five minutes before removing from the oven.
  7. Allow resting briefly before garnishing with parsley and serving.
