  • 1 tablespoon reduced sodium soy sauce
  • 5 1/2 cups water (or beef broth)
  • 1 12 oz. can evaporated milk
  • 1/2 tablespoon cornstarch
  • 2 tablespoons beef bouillon (or omit)
  • 1 pound short cut pasta (like orecchiette)
  • 5 oz. freshly shredded Gruyere cheese
  • 1/4 cup freshly shredded Parmesan cheese
  • Fresh parsley for garnish (optional)
  • 1 tablespoon fresh parsley, minced (or 1 tsp dried)
  • 2 teaspoons fresh thyme, minced (or 3/4 tsp dried)
  • 1/2 tsp EACH dried oregano, paprika, pepper

Instructions

  1. Heat olive oil and butter in a large pot over medium heat. Add sliced onions, salt, and pepper; cook until golden brown and caramelized (about 30 minutes).
  2. Stir in minced garlic and red pepper flakes; sauté for another minute until fragrant.
  3. Pour in Worcestershire sauce, soy sauce, water (or broth), evaporated milk, cornstarch, and beef bouillon; stir to combine.
  4. Add uncooked pasta directly into the pot; bring to a gentle simmer, cooking until al dente per package instructions.
  5. Remove from heat and stir in Gruyere and Parmesan until melted; garnish with fresh parsley and thyme before serving.
