  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon fresh thyme leaves (optional)
  • 1/2 cup grated Gruyère cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten (for egg wash)

Instructions

  1. Caramelize the onions: In a skillet over medium-low heat, melt butter and olive oil. Add sliced onions and cook slowly for about 30 minutes until golden brown. Stir in sugar halfway through.
  2. Sauté the mushrooms: In the same skillet, increase heat to medium and add more butter if needed. Cook mushrooms until golden brown and liquid evaporates (about 10 minutes). Stir in fresh thyme if using.
  3. Prepare puff pastry: Preheat oven to 400°F (200°C). Roll out puff pastry on a floured surface into a rectangle fitting your baking sheet. Place on parchment-lined sheet and score a border.
