  • 2 teaspoons instant dry yeast
  • 2 teaspoons sugar
  • 4 cups all-purpose flour
  • 3 teaspoons salt
  • 4 tablespoons extra virgin olive oil (divided)
  • Optional toppings: flaky salt, rosemary, olives, sun-dried tomatoes

Instructions

  1. Bloom the yeast by whisking lukewarm water, instant dry yeast, and sugar in a small bowl; let sit for 30 seconds.
  2. In a large mixing bowl, combine flour and salt. Add the yeast mixture and stir until you have a wet dough. Mix in 2 tablespoons of olive oil.
  3. Proof the dough by covering it and letting it rise in a warm place for 1.5 to 2 hours or overnight in the fridge.
  4. Gently fold the dough 20 to 40 times to strengthen its structure.
  5. Grease a baking pan with olive oil and spread the dough into it; cover and let rise again for 45 minutes.
  6. Create dimples in the dough using your fingers dipped in an olive oil-water mixture; top with optional rosemary.
  7. Bake at 450°F (230°C) for 20-25 minutes until golden brown.
