  • 142 g granulated sugar
  • 6 egg yolks
  • 56 g neutral oil
  • 396 g heavy cream (chilled)
  • 100 g strawberry jam
  • 10 medium-sized fresh strawberries (sliced for filling)
  • Additional fresh strawberries (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  2. In a large mixing bowl, whisk together cake flour, sugar, and salt. Add egg yolks, oil, and vanilla extract; mix until smooth.
  3. Divide the batter evenly between the prepared pans and bake for 20–22 minutes until golden.
  4. Allow cakes to cool completely before removing from pans.
  5. In another bowl, whip the chilled heavy cream until stiff peaks form.
  6. Assemble the cake by placing one layer on a serving plate, spreading strawberry jam and whipped cream over it, followed by sliced strawberries. Top with the second layer and cover with remaining whipped cream.
  7. Decorate with whole strawberries and chill for at least one hour before serving.
