  • 2 tablespoons avocado or olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, finely chopped
  • 1 red bell pepper, chopped
  • 2 cups cooked shredded chicken (rotisserie recommended)
  • 1 can (4 oz) diced green chiles
  • Sea salt and black pepper, to taste
  • 15 ounces Siete Foods red enchilada sauce
  • 810 Siete Foods cassava flour tortillas
  • 1 1/2 cups non-dairy cheddar cheese shreds

Instructions

  1. Heat avocado or olive oil in a large skillet over medium heat. Sauté onion and garlic until fragrant.
  2. Add red bell pepper, shredded chicken, diced green chiles, sea salt, and black pepper; stir until well combined.
  3. Spread some enchilada sauce on the bottom of a baking dish. Fill each tortilla with the chicken mixture, roll up tightly, and place seam-side down in the dish.
  4. Pour remaining enchilada sauce over the rolled tortillas and top with non-dairy cheese.
  5. Preheat oven to 350°F (175°C) and bake for about 25 minutes until golden.
