2 tablespoons olive oil
1 pound ground turkey
1 small sweet onion (finely diced)
1 cup shredded carrots
3 garlic cloves (minced)
1 teaspoon fresh ginger (minced)
¼ cup chicken broth
8 cups shredded cabbage
3 tablespoons soy sauce or tamari
1 tablespoon rice vinegar
Salt and black pepper, to taste
Instructions
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Brown the ground turkey for about 5-6 minutes.
Push turkey to one side, add remaining olive oil and onion; cook for about 3-4 minutes. Add carrots, garlic, and ginger; sauté for another 2 minutes.
Pour in chicken broth and stir in cabbage, soy sauce, rice vinegar, salt, and pepper. Cover and cook on medium-low for about 12-15 minutes until cabbage softens.
Stir in toasted sesame oil before serving over white rice. Garnish with green onions and sesame seeds.
