  • 3 cups cooked white rice
  • 1 cup diced onion
  • 1 cup finely diced carrot

  • ¼ cup low sodium soy sauce
  • 2 tablespoons vegetable oil (divided)
  • 1 large egg

Instructions

  1. Heat 1 tablespoon of oil in a non-stick skillet over high heat; add shrimp and cook until pink. Remove and keep warm.
