  • 12 cups chicken broth
  • 4 celery stalks (chopped)

  • 1 onion (diced)
  • 2 cups dry pasta
  • 1 tsp garlic powder
  • 2 tsp parsley (dried)
  • 1 tsp oregano
  • ½ tsp thyme
  • 1 bay leaf
  • ½ tsp sea salt
  • 1 tsp cracked pepper
  • ¼ cup corn starch (for thickening)
  • 1 tablespoon olive oil (for stove top)

Instructions

  1. Shred the rotisserie chicken into bite-sized pieces.
  2. In a large pot, heat olive oil over medium heat and sauté diced onions, celery, and carrots until soft (about 5 minutes).
  3. Add shredded chicken and chicken broth to the pot.
  4. Stir in seasonings and bring to a boil; then reduce heat and simmer uncovered for about 30 minutes.
  5. Add dry pasta and cook according to package instructions until al dente.
  6. Mix cornstarch with water until smooth; gradually add it to the soup while stirring until thickened.
