  • 1 (14-16 pound) whole turkey
  • Salt & pepper (to taste)
  • 1 cup unsalted butter (softened)
  • 1 tablespoon fresh sage (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • 1 tablespoon fresh rosemary (chopped)
  • 4 cloves garlic (minced)
  • 1 lemon (halved)

Instructions

  1. Remove the turkey from the fridge about an hour before roasting to reach room temperature.
  2. Preheat the oven to 450°F and prepare your roasting pan.
  3. In a bowl, mix softened butter with sage, thyme, rosemary, garlic, salt, and pepper until well combined.
  4. Pat the turkey dry and season generously with salt and pepper inside and out.
  5. Stuff the cavity with halved lemon and garlic cloves.
  6. Rub herb butter all over the turkey for flavor infusion.
  7. Roast breast-side up at 350°F for approximately 13 minutes per pound.
  8. Use a meat thermometer to check doneness; it should read at least 165°F in the thigh.
  9. Let rest for 20 minutes before carving.
