  • 2 fish fillets (your choice)
  • 6 sprigs thyme (chopped)
  • 3 sprigs rosemary (chopped)
  • 4 garlic cloves (minced)
  • 1 cup cherry tomatoes
  • ½ cup olives (pitted)
  • 1 medium onion (diced)
  • 1 zucchini (diced)
  • ¼ cup olive oil
  • Juice and zest of 1 lemon
  • 1 tsp oregano (dried)
  • 2 tsp parsley (chopped or dried)
  • 1 tsp basil (chopped optional)
  • 1 tbsp lemon juice
  • 1 tbsp sweet chili sauce
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  1. Preheat your oven to 400°F. Lightly grease a baking dish.
  2. In a bowl, mix thyme, rosemary, garlic, lemon zest, lemon juice, olive oil, salt, and pepper to create the marinade.
  3. Rub the marinade generously over both sides of the fish fillets. Reserve some for later.
  4. Toss chopped veggies in the remaining marinade until well coated.
  5. Layer the veggies in the prepared baking dish and place marinated fish on top.
  6. Drizzle any remaining marinade over the fish.
  7. Bake for about 15 minutes or until the fish flakes easily with a fork (145°F internal temperature).
  8. Let rest for 5 minutes before serving.
