  • ½ cup softened butter
  • ¼ cup powdered sugar
  • 1 cup flour
  • 2 large eggs
  • 1 cup granulated sugar
  • ½ teaspoon baking powder
  • 3 tablespoons lemon juice
  • Zest from ½ to 1 lemon
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350°F (180°C) and prepare an 8×8 inch pan by greasing it or lining it with parchment paper.
  2. In a mixing bowl, cream together the softened butter and powdered sugar until smooth. Gradually add flour and salt; mix until combined. Press this mixture into the bottom of your prepared pan.
  3. Bake the shortbread base for about 15 minutes until lightly golden.
  4. While the base is baking, whisk together the eggs, granulated sugar, baking powder, lemon juice, zest, and salt in another bowl.
  5. Once the base is done baking, pour the lemon mixture over it and return it to the oven for an additional 30 minutes until set but slightly jiggly in the center.
  6. Allow cooling completely before slicing into squares.
