  • 1 large egg
  • 3 cups (360g) all-purpose flour
  • 1/2 cup (113g) softened butter (for frosting)
  • 1 1/2 cups (165g) confectioners' sugar (for frosting)
  • 1 teaspoon pure vanilla essence (for frosting)
  • Pinch of fine sea salt (for frosting)
  • 2 to 4 tablespoons powdered raspberries from freeze-dried raspberries (for frosting)
  • 2 to 3 tablespoons whole milk (for frosting)

Instructions

  1. Cream softened butter with granulated and confectioners' sugar until light and fluffy.
  2. Mix in vanilla, salt, lemon zest, baking soda, and egg until well combined.
  3. Gradually add flour until just incorporated.
  4. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  5. Scoop tablespoon-sized dough portions onto the sheet, spacing them apart.
  6. Bake for 12 minutes or until lightly golden; allow cookies to cool completely.
