  • 1 can (14 oz) diced tomatoes
  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon red chili flakes (optional)
  • Fresh cilantro, chopped
  • Lemon wedges
  • Steamed rice or warm naan bread

Instructions

  1. Heat oil in a large skillet over medium heat. Sauté chopped onion for about 5 minutes until soft, then stir in minced garlic and grated ginger for another minute.
  2. Add curry powder, cumin, coriander, turmeric, and paprika; toast spices for 1–2 minutes to enhance flavors.
  3. Stir in diced tomatoes; cook for 3–4 minutes until softened. Pour in coconut milk and bring to a gentle simmer.
  4. Add drained chickpeas and cover; simmer on low heat for about 10 minutes to blend flavors.
  5. Adjust seasoning with salt, pepper, or chili flakes as desired.
