  • 4 cod fillets (56 oz each)
  • ¼ cup low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1½ tsp fresh grated ginger
  • 2 cloves garlic (minced)

Instructions

  1. In a mixing bowl, whisk together soy sauce, sesame oil, honey, rice vinegar, minced garlic, and grated ginger to create the marinade.
  2. Place the cod fillets in a shallow dish or resealable bag and pour the marinade over them. Let them marinate for 15 to 30 minutes.
  3. To bake: Preheat the oven to 400°F. Place marinated cod on a parchment-lined baking dish and bake for 12–15 minutes until flaky.
  4. To pan-sear: Heat oil in a skillet over medium heat. Cook each side of the cod for 3–4 minutes while basting with extra marinade.
  5. Optional: For a thicker glaze, simmer leftover marinade in a small saucepan with cornstarch slurry until thickened.
